Carnivore Egg Muffins: Easy 3-Ingredient Grab-and-Go Breakfast

School mornings in our house are chaos.

Lost shoes. Missing homework. Somebody always needs a permission slip signed right now.

In the early days of carnivore, breakfast was the first thing to go. I’d skip it, run out the door, and by 11 a.m. I’d be staring at the vending machine like it owed me money.

Then I started making egg muffins on Sunday nights.

Twelve little breakfasts, ready to grab. No thinking. No cooking. No excuses.

They saved my mornings — and they might save yours too.

Why Egg Muffins Work So Well on Carnivore

They tick every box:

  • Simple: three ingredients, minimum.
  • Fast: 10 minutes of work, 20 minutes in the oven.
  • Portable: eat them in the car, at your desk, on the bleachers.
  • Filling: protein and fat that actually last until lunch.
  • Flexible: swap the meat and you’ve got a whole new breakfast.

And if your kids are anything like mine, they’ll steal a few.

Ingredients (Makes 12)

  • 12 large eggs
  • 1 pound breakfast meat, cooked and chopped — bacon, ground beef, pork sausage (check labels for sugar) or leftover steak
  • 1 teaspoon salt, or to taste
  • Butter, tallow or bacon grease for greasing the pan

Optional, if you include dairy:

  • ½ cup shredded cheese
  • 2 tablespoons heavy cream for a softer, fluffier texture

Instructions

Step 1: Heat the oven. Preheat to 350°F (175°C). Grease a 12-cup muffin pan generously with butter or bacon fat. Don’t skip this — eggs love to stick.

Step 2: Cook the meat. Brown ground beef or sausage in a skillet, or cook bacon until crisp. Drain off some of the fat (save it!), then chop the meat into small pieces.

Step 3: Divide the meat. Spoon the cooked meat evenly into the muffin cups, about two to three tablespoons per cup.

Step 4: Whisk the eggs. In a large bowl, whisk the eggs with the salt — and the cream, if using — until smooth.

Step 5: Pour. Pour the egg mixture over the meat, filling each cup about three-quarters full. They puff up in the oven. Top with cheese if you like.

Step 6: Bake. Bake for 18–22 minutes, until the centers are set and no longer jiggly. Eggs should be fully cooked to 160°F (71°C).

Step 7: Cool and release. Let the muffins rest in the pan for 5 minutes. Run a butter knife around each edge and pop them out.

My Favorite Variations

Once you’ve made the basic version, try these:

Bacon & Cheddar: the crowd favorite in our house.

Steak & Egg: chopped leftover ribeye with a little extra salt.

Sausage Supreme: sugar-free pork sausage with a pinch of black pepper if you tolerate it.

Smoked Salmon: flaked salmon with a spoon of cream cheese. Fancy enough for guests.

Ground Beef & Butter: browned beef and a small pat of butter on top before baking. Pure comfort food.

Storage and Reheating

Fridge: Store in an airtight container for up to 4 days.

Freezer: Freeze in a single layer on a tray, then transfer to a freezer bag. They keep for about 2 months.

Reheat: Microwave 30–60 seconds from the fridge, or about 90 seconds from frozen. You can also warm them in a 350°F oven for 10 minutes for a less rubbery texture.

Always reheat until hot all the way through.

Tips for Perfect Egg Muffins Every Time

  • Grease more than you think. Even nonstick pans benefit from fat.
  • Don’t overfill. Three-quarters full keeps them from spilling over.
  • Don’t overbake. Pull them when the centers just set — they’ll firm up as they cool.
  • Cook the meat first. Raw meat won’t cook through safely in the time the eggs need.
  • Pat moisture dry. Wet meat can make the muffins soggy.

Make It a Sunday Habit

The real secret isn’t the recipe. It’s the routine.

Every Sunday evening, while dinner is cooking, I brown a pound of meat and get the muffins in the oven. By the time the dishes are done, breakfast for the whole week is cooling on the counter.

Ten minutes of effort on Sunday buys you five calm mornings.

That’s the best deal in my kitchen.

How Many Should You Eat?

On a busy morning, I usually grab three or four.

Bigger appetite? Eat five. Smaller appetite? Two might do it.

Listen to your hunger — not a rule.

Common Questions

Can I make them without cheese?

Yes. The basic recipe is just eggs, meat and salt. Cheese and cream are optional extras for people who include dairy.

Why did my muffins sink?

A little sinking is normal as they cool. A lot usually means they were overfilled or underbaked.

Can I use a silicone muffin pan?

Absolutely. Silicone makes them easier to pop out. Set it on a sheet pan so it’s stable going in and out of the oven.

Are these good for kids?

Mine love them. Let them pick the meat and help pour the eggs — they’re more likely to eat what they made.

Breakfast Doesn’t Have to Be Hard

Carnivore isn’t about complicated cooking. It’s about having good food ready when life gets loud.

These egg muffins are my answer to chaotic mornings.

Twelve breakfasts.

Thirty minutes on a Sunday.

And no more staring down the vending machine.
